- بعد انفصال نصفيه ونتركه يتقطر قليلا ونرجعه القدر ونضع عليه الموكونات صفار البيض جبن طري ملح ملعقة زبدة ونخلطه جيداً ثم نضعه على النار مرة تانية.
- نواصل الخلط جيداً حتى لا يلتصق بدون توقف حتى تتجمع كتلة متل عجينة الشو ننزعها ونتركها جانبا ندلكها برف الاصابع ثم نضعها في صحن مغروف لتصبح متل شكل نصف كرة. مدهون بقليل من الزيت ونتركها في الثلاجة ليلة كاملة وتصبح صالحة للاستعمال.
